I usually seem to miss the wild garlic season so I was overjoyed to spot some on my walk recently. I just picked the leaves, I know the bulb can be used but I didn't want to disturb the plant from growing again next year!


Being pretty busy, I wanted a super quick recipe to use the garlic before it started to to wilt too much. This recipe is perfect!


No cooking involved and a tasty way to use this wild plant.


What's good about this recipe is that it can be stored in the freezer and has multiple uses. I'm going to try making some chicken kievs with it soon!


So, let's get into it!



Wild Garlic Butter

Ingredients for Wild Garlic Butter

Ingredients

  • About 25g wild garlic leaves

  • 125g butter

  • 1/2 tsp salt (I used pink salt)



Directions


  • All you need to do is mash the butter with a fork, chop the garlic leaves and mix all of the ingredients together.

  • After this, you can shape and roll the butter between some parchment paper, twisting the ends like a Christmas cracker afterwards.



I found my herb scissors made light work of the chopping.
