Spinach and Cheese Dip: The Ultimate Party Snack You Can Make in a Snap

If you're in search of a crowd-pleasing savoury dish, you've found it. I don't think I've taken this dish anywhere without having been asked for the recipe. I debated keeping it to myself, letting the secret die with me but I just can't not share this delight.

So this recipe can be made in a slow cooker or in the oven. I find the oven method a good quick option and the crock pot to be great for preparing ahead and keeping warm for a party.
I like to keep things simple where possible so I've put together this recipe using whole pots of ingredients to save both measuring and waste. I've also given substitutes of some items for convenience so you might have everything you need already!
Ingredients
1 Tbsp butter
1 bag fresh spinach (250-300g works) or between 150-175g frozen spinach (around 6-8 blocks)
250g pot cream cheese
300ml pot sour cream (preferred but if you have greek yoghurt, that works too!)
1 cup shredded cheddar cheese or thereabouts
2 balls fresh mozzarella cheese
1 teaspoon garlic powder or a couple of fresh cloves, minced
Salt and pepper to taste
Things to Dip:
Fresh bread (baguette, slice sourdough, pitta etc)
Crudités (chopped carrot, cucumber, pepper are classics)
Tortilla chips or crisps
Crackers
Or anything else delicious you can think of!
Directions:
Sauté the spinach (fresh or straight from the freezer) in butter and preheat the oven to 200'c.
Whilst this is happening, grate the cheddar cheese and one ball of mozzarella. Put into an oven proof dish (or your crockpot if slow cooking) and add the pot of cream cheese, the sour cream, garlic and salt and pepper.
Don't skip this next step! It's really important to strain the spinach or it can get watery. When it's sautéed, rinse the spinach under cold water in a colander or sieve and then squeeze out as much liquid as possible. Once thats drained, mix it in to the dish with the rest of the ingredients.
Grate the final ball of mozzarella on top and it's ready to bake.
This takes around 20 minutes in the oven or around an hour and a half in the slow cooker on high. It can be switched to low and kept warm to serve at a party.
