Calming Lavender Biscuits

One thing you should know about me: I LOVE lavender! I will try and incorporate it in my life wherever possible. I know it gives some people granny vibes but I'm skipping the mid-life season and am out here living my granny years prematurely.


Calming Lavender Biscuits

So here is one of my favourite biscuit recipes. It's refined sugar free and I'm sure that all of that lavender must be relaxing. That's my excuse for eating so many anyway!


Here's the recipe for my Calming Lavender Biscuits:


Ingredients:

120g butter

1/2 cup maple syrup

1 tsp vanilla extract

275g plain flour (gluten free works too!)

zest of 1 lemon

1 tbsp dried lavender


Directions:

1. Preheat the oven to 180'.

2. Mix together the butter, maple syrup and vanilla extract.

3. Add the flour until well combined.

4. Stir in the lemon zest and lavender.

5. Make the dough into a ball. At this point you can pop it into the fridge for half an hour to chill. 6. This isn't absolutely necessary but does make it easier to roll the cookies out.

7. Next, roll out the dough and use a cookie cutter to cut the biscuits out.

8. Pop them onto a lined baking tray and bake at 180' for about 10 minutes or until slightly golden.

9. Leave to cool and enjoy with a cup of Earl Grey. Delicious!
